Sweet Potato and Black Bean Tacos

(Health Magazine Jan-Feb)
-Chop 1 small sweet potato into 1/2-inch cubes. In a skillet coated with 1 teaspoon olive oil, saute cubes, 1 minced garlic clove, and 1/4 teaspoon cumin for 15 minutes.
-Add 1/2 cup canned black beans, rinsed and drained; cook 5 more minutes.
-Fill 3 warm corn tortillas with bean-and-potato mixture, 1 tablespoon salsa, and 1 tablespoon chopped fresh cilantro.

Mmm! That was super easy and delicious! I ate almost all three, but was really full. I used my regular chip salsa, so that part could have been better (i.e. fresh salsa). But other than that it was great!

I started the potatoes off on med-high, which is why they look a little too done. Definitely cook on medium.
I'm loving this cooking thing this week! I wish I had more time during my regularly scheduled week. I enjoy it, I feel better and I know it's so much healthier when I cook meals like this for myself. I will be trying!  Also, I will be writing about it when I do. So, be prepared :)
